Stir Fry Chicken Breast with Corn, Bell Pepper, Cucumber, and Peas

Stir fry! When I heard about this cooking method then my mind will be blown by a full of simple, practical, quick and easy to be prepared type of dish. Stir frying is a Chinese cooking technique in which ingredients are fried in a small amount of very hot oil while being stirred in a wok. The technique originated in China and in recent centuries has spread into other parts of Asia and the West. Many claim that this quick, hot cooking seals in the flavors of the foods, as well as preserving their color and textureA lot of variety of vegetables and other ingredients are easily processed in the stir fry. For office workers who went home at late night like me, stir fry is a very good alternative for comfort and quick serving meals.    

For this recipe I used boneless chicken breast, red bell peppers, frozen peas and corn.  I also add ground cinnamon and clove to enrich the taste and as an alternative version of seasoning for stir. A fragrant aroma spread up the whole house.

Here is the simple recipe. 

Fragrant Stir Fry Chicken Breast  with Corn, Bell Pepper, Cucumber, and Peas

for 2 servings

Ingredients:
- 1 tablespoon vegetable oil for sauteing
- 200 gram boneless chicken breast, cut into cubes
- 1 medium cucumber cut into 5 cm long and split each into 4 parts
- half red bell peppers, cut into 2 x 2 cm
- half green bell peppers, cut into 2 x 2 cm
- 2 tablespoons frozen peas
- 2 tablespoons frozen shelled corn 
- 1 stalk green onion, ​​cut crosswise 1 cm
- 50 ml water if needed

Seasonings:
- 1/2 medium size yellow onion, coarse chopped
- 2 cloves garlic, minced
- 2 bird's eye chilli, thinly sliced
- 2 cm fresh ginger, minced
- 1 teaspoon sesame oil
- 1/4 teaspoon ground white pepper
- 1/4 teaspoon ground clove
- 1/4 teaspoon ground cinnamon
- 1/2 teaspoon sea salt 

Directions:
Heat the olive oil in a skillet and saute garlic and onion until fragrant. Add chillies, ginger and sesame oil,  stir and cook for a few second.

Add chicken breast, stir and cook until chicken is well cooked. Add cucumber, bell peppers, frozen peas, corn, green onion, stir until vegetables half cook. 

Add all the seasonings, stir fast and cook for a few second. Add salt and pepper to taste. Turn off the heat and serve on a serving plate. Enjoy!
